When it’s cold outside, to the point where it feels like it’s biting your bones I need something cozy and warm to comfort me, and it has to be budget friendly as well as easy. I’m a mom, and I work so I’m busy.
One of the best ways, and most budget friendly is with soups. You make a big batch of soup and the rest, well you can eat it for days, months even if you store it properly.
But sometimes you need something more warming that a chicken noodle soup, something more stick to your ribs type of soup,
Previously I experimented and made a clam chowder, I guess I was feeling a bit nostalgic or something but what I created was something creamy and comforting.
Yet, honestly we can’t have clam chowder all the time.
As I write this, it’s towards the end of the month and so most of the groceries are gone but I had potatoes which gave me the idea to make a homemade potato soup.
Just the idea of making a potato soup began making the cold day, -2 degrees celsius suddenly seem cozier. And when I ate the soup it felt like a warm hug.
Now, I want to share it with you all, so let’s get to making my easy & budget friendly homemade potato soup.
- 2-3 large potatoes golden potatoes or another type of potato you’d use for mashed potatoes
- ¼ cup of flour
- 2 TBSP of butter
- One onion
- 3 to 3 1/2 cups of chicken stock
- 1 cup of milk, or half in half (they do not have half in half in France so thus the addition of milk.)
I like my soup a little thicker, so if you want it to be thinner just add a little more chicken stock.
Double if you’re making for more but I’ve made this one for 2-3 people

Instructions
Emulsion blender- to make a more smooth creamy like soup (optional)
Heavy bottom pot like a dutch oven or something similar
Chop the onion into small pieces, while the butter melts. Then add the onion to the pot.
Allow the onion to cook until translucent, then add the flour
Stir while cooking the flour for about minute. This will give you time to cook the flour taste out.
After the minute add the chicken stock-I recommend you add it slowly allowing it to thicken.
Stir frequently.
While you’re waiting for the stock to thicken, warm the milk up slightly so it doesn’t curdle. It’s ok if you add it in slightly at room temperature or from the fridge just add it in a little at a time.
Allow the soup to thicken.
For about a minute or two, while you’re waiting you can chop up the potato in small pieces.
Cook for about fifteen to twenty minutes until the potatoes are fully cooked.
At this point you have the option to use your emulsion blender to make a smooth soup, or you can partially blend the potato pieces down. Or you can leave it chunky it’s all up to you!
Serve with cheese, or other toppings you would place on a baked potato. This is now your cozy from the inside out dinner recipe, Enjoy.
